     What is Chicken Blanquette?

The Blanquette is a French 🇫🇷  word which means neither a chicken nor butter is browned in a cooking process. The browning of meat or fat in this way is to cook them en Blanquette.

Ingredients:-

  1. Chicken Curry Cuts, 2kg
  2. Onion, 650 grams 
  3. Leeks, 100 grams 
  4. Celery, 130 grams
  5. Chicken Stock, 4 litre 
  6. Egg yolk, 200 grams
  7. Flour, 250 grams
  8. Salt, 80 grams
  9. Parsley, 100 grams
  10. Butter, 350 grams 
  11. Cream, 900 ml



Method Of Cooking:-

  1. Heat butter in a pan and lightly saute onions and leeks till it starts to sweat.
  2. Add celery and stir lightly.
  3. Add pieces of chicken with one side facing down so as to sear the meat without browning.
  4. Add 15 ml of white wine and turn the meat to the other side to complete the searing process.
  5. Add to stock to immerse 2/3rd of the meat in the liquid.
  6. Remove from flame and place on a hot plate for 20 minutes, cover with a lid.
  7. Take the pan off the hot plate and set aside to cool.
  8. Take out chicken pieces and arrange on a serving platter.
  9. Heat blond roux and thicken the liquid and finish it off with cream.

Remarks:-

  • Cook till when the Chicken gets browned.
  • Shallow fry all the vegetable onions, leeks, celery.
  • Make the slurry of flour and water and mix it well without any lumps.
