What is Chicken Blanquette?
The Blanquette is a French 🇫🇷 word which means neither a chicken nor butter is browned in a cooking process. The browning of meat or fat in this way is to cook them en Blanquette.

Ingredients:-
- Chicken Curry Cuts, 2kg
- Onion, 650 grams
- Leeks, 100 grams
- Celery, 130 grams
- Chicken Stock, 4 litre
- Egg yolk, 200 grams
- Flour, 250 grams
- Salt, 80 grams
- Parsley, 100 grams
- Butter, 350 grams
- Cream, 900 ml
Method Of Cooking:-
- Heat butter in a pan and lightly saute onions and leeks till it starts to sweat.
- Add celery and stir lightly.
- Add pieces of chicken with one side facing down so as to sear the meat without browning.
- Add 15 ml of white wine and turn the meat to the other side to complete the searing process.
- Add to stock to immerse 2/3rd of the meat in the liquid.
- Remove from flame and place on a hot plate for 20 minutes, cover with a lid.
- Take the pan off the hot plate and set aside to cool.
- Take out chicken pieces and arrange on a serving platter.
- Heat blond roux and thicken the liquid and finish it off with cream.
Remarks:-
- Cook till when the Chicken gets browned.
- Shallow fry all the vegetable onions, leeks, celery.
- Make the slurry of flour and water and mix it well without any lumps.
