Cream of mushroom soup is a clear soup in which a basic roux is thinned with milk or cream. The Cream Of Mushroom is originated from France. The main ingredients of the cream of mushroom soup are roux, cream, milk, mushrooms and mushroom broth.

Ingredients:-
- Butter, 50 grams
- Onions, 100 grams
- Garlic, 30 grams
- Button Mushroom, 500 grams
- White Wine, 60 ml
- Vegetable Stock, 1.5 litre
- Bouquet Garni, 1 pcs.
- Sachet d'epices, 1pcs.
- Cream, 200 ml
- Bechamel Sauce, 150 ml
- Salt
- Pepper
Method Of Cooking:-
- Heat butter and sauté onion and garlic till translucent.
- Add sliced mushrooms and deglaze with white wine.
- Add sliced mushrooms and sauté well. Add vegetable stock and let it simmer with Bouquet Garni and Sachet d'epices until mushrooms are soft.
- Puree the soup and strain through a chinois. Put it to boil again and add béchamel sauce and cook till the soup gets a thickened texture.
- Remove from heat and add the cream stirring to get a creamy and smooth texture.
- Serving piping hot garnished with a spring of thyme.
Remarks:-
- Use chopped onions and garlic.
- Washed, cleaned and sliced the button mushroom.
- Use cooking wine.
- The vegetable stock is preferably made with mushrooms.
- The bouquet garni is a bunch of herbs which were a tie in a muslin cloth and it is used for flavouring.
- The ingredients of Sachet d'épices contain Cheesecloth cut to about 8" × 6", 10 spring thyme(fresh), 10 stems parsley(flat-leaf and fresh), 20 peppercorns, 3 garlic cloves(whole and fresh), 3-4 bay leaves(dried), twine(about 6").
- Use cooking cream.
- Salt and pepper as per your taste.
- Sauté the onion and garlic since it becomes translucent.
- Garnish the soup with basil. For freshness and good appealing.
- And serve with cheese garlic bread, toast or bread.
