What is Minestrone?
Minestrone is a soup which is originated from Italy. It is made up of tomato broth and rice or pasta. In Minestrone soup we can use leftover vegetables.
Why Minestrone soup is necessary?
The Minestrone soup is very healthy soup by its nature and it contains so much of vitamins and proteins. It contains 113% of vitamin and 10 grams of proteins (it'ss according to my portion size). The Minestrone Soup contains calories per 10.5 Oz.
History of Minestrone Soup
The Minestrone Soup is discovered in 2nd century B.C. The word Minestrone, meaning a thick vegetable soup which is attested in English in 1871. It is originated from Italy.

Ingredients:-
- Olive Oil 50 ml
- Carrot, 100 grams
- Zucchini 100 grams
- Potatoes, 100 grams
- Onions 100 grams
- Leeks 50 grams
- Broccoli 50 grams
- Cauliflower 50 grams
- Tomatoes, 200 grams
- Green peas 100 grams
- Basil, 10 grams
- Vegetable stock, 2 litre
- Salt & Pepper, To taste
Method of cooking:-
- Wash all the vegetables and process all the ingredients as listed above.
- Heat olive oil and add chopped garlic. Saute without colouring and add diced potatoes and carrots. cover with a butter paper and let the vegetable stew at medium heat for five to seven minutes.
- Now add onions leeks and 50 ml of stock and stew again cove
- Red with butter paper.
- Add zucchini and tomatoes and stew again in an an an an imanandn ilan and has assimilated leftover vegetable stock and add cauliflower and broccoli. Bring to a boil and simmered for five to seven minutes. Check the seasoning.
- Add split peas and shredded basil. Serving piping hot.
Remarks-
- Do not use extra virgin oil.
- Carrot, Zucchini Potatoes, Onions, Tomatoes or Leeks cut into 1 cm dices.
- Broccoli and Cauliflower cut into small florets.
- Green peas skinned and split.
- Basil should be shredded.
- In vegetable stock use the trimming of above vegetable.
- Boil all the vegetables when you prepare the soup.
- Serve the minestrone soup with cheese garlic bread or the roasted toast. Whatever did you like?
- And garnish with some basil leaves.
