Mayonaise Sauce Recipe

 Mayonaise is a type of sauce the alternative name of mayonnaise is Mayo. The place of origin is Spain or France. The main ingredients in the mayonnaise are oil, egg yolk, vinegar/lemon juice. The region of the state is Mahón, Menorca, Balearic Islands, Provence, Bayonne. Mayonnaise is used all around the world this is also based for chilled sauces and salad dressings. Chile consumes the most mayonnaise around 2.30 kilo per year consumption of mayonnaise in chile. Mayonnaise is a thick cold sauce and dressing it is commonly used in sandwiches, burgers, salad dressing or French fries.

100 grams of mayo contains 680 calories. The total fat is 75 grams, carbohydrate 0.6 grams and protein 1 gram. It also contains Vitamin A, Vitamin D or Iron.

Ingredients:-

  1. Egg Yolks, 4 no. 
  2. Oil, 400 ml
  3. Mustard Paste, 10 grams
  4. Vinegar, 10 ml
  5. Salt, to taste
  6. Pepper, to taste


Method Of Cooking:-

  1. Combine egg yolks, salt, pepper, and mustard paste in a round bowl.
  2. Whisk to ribbon stage and add oil continuously in a thin stream, whisking all the time.
  3. If the sauce becomes too thick, then add more vinegar to thin it down.
  4. Whisk till a sterilized emulsion is formed and it stands in firm peaks.
  5. Use as required. 


Remarks:-

  • Beat the sauce continuously. 
  • Refrigerate the mayo sauce before using the sauce.
  • Use salad oil preferably.
  • Use Dijon Mustard paste in a mayonnaise sauce.
  • Use white wine vinegar.
