What is Roast Chicken?
Roast Chicken is prepared as food by roasting whether in house kitchen over a fire or in a rotisserie. The chicken is roast with its own juices and fats by circulating the meat during roasting. They are usually cooked into the fire or heat with some type of rotary grill.

Ingredient:-
For Marination:-
- Corn-fed Chicken, 5 kg
- Salt, 150 grams
- Black Pepper, 80 grams
- Butter, 400 grams
- Rosemary, 15 grams
For Sauce:-
- Artichoke, 500 grams
- Tomato, 1 kg
- Extra Virgin Olive Oil, 100 grams
- Sugar, 10 grams
- Parsley, 15 grams
- Thyme, 15 grams
- Salt, 5 grams
- Butter, 100 grams
Method Of Cooking:-
- Marinate the chicken with salt, pepper, rosemary, and insert chopped butter under the skin of the chicken.
- Truss the chicken and roast in an oven until the juices run clear.
- Heat olive oil and saute chopped and blanched tomatoes. Cook until soft.
- Season with sugar, salt, and herbs.
- Melt butter in another pan and saute the artichokes. Season them with chopped thyme.
- Present the roast chicken with sauce and sauteed artichoke.
Remarks:-
- Choosing the right chicken. A good rule of thumb 1 person =1/2 pound of chicken, air-chilled chicken rather than water chilled.
- Clean your chicken by water or clean it with a paper towel.
- When you marinate your chicken rest your chicken for eight hours.
- Preheat oven to 450°F / 230°C
- After letting the chicken rest for one hour on room temperature.
- Roast your chicken for one hour at 230°C.
