Volkorn Recipe

 Vollkorn is a whole grain in which only husks and awns have been removed after harvest. The Vollkorn is consists of fibre, vitamin, oils and minerals are in the bran and the seedling are considered to be beneficial to human health. Vollkorn is made in German.

Total fat is 2 grams.

Carbohydrates 26 grams
Protein 4 grams
And it also consists of calcium and iron.

Ingredients:-

  1. Milk, 500 ml
  2. Flour, 1 kg
  3. Sugar, 300 grams
  4. Butter, 1 kg
  5. Marzipan, 300 grams
  6. Salt, 30 grams
  7. Lemon zest, 20 grams
  8. Cardamom powder, 1 gram
  9. Mace powder, 1 gram
  10. Vanilla pod, 1 gram

Method Of Cooking:-

  1. Mix all the ingredients in the dough mixer except the butter and marzipan.
  2. Knead the dough for 5 minutes on slow speed or until the gluten has formed.
  3. Add 100 grams of softened butter and knead again till a smooth dough is obtained.
  4. Keep the dough for proofing, knockback and rest again.
  5. Scale a dough and shape the role of the dough to 8-inch diameter with thick in the centre and thin on the edge.
  6. Put a rolled pieces of marzipan and fold over to form a half-moon shape. Keep on the tray for proofing.
  7. Bake at 200°C for 40 minutes.
  8. When it is hot, brush dip the strudel into melted butter.

Remarks:-

  • If you using the dried yeast first you have to activate the yeast in lukewarm water.
  • Properly knead your dough and when you handle the dough put some oil in your hand for shiny-ness and for greasing the dough.
  • After kneading cover the dough with a muslin cloth and rest your dough for 1 hour.
  • Grease your pan with oil/butter.
  • Make the cuts on the top of the loaf.
  • Sprinkle some flour on the top of the loaf.
  • And fill another pan with water and put it inside the oven for moisture.
  • Preheat your oven 200°C for 30 minutes.
  • When the bread is fully baked greased the bread with butter with a brush.
